BRINDISI FARRO ROAST VEGGIE SALAD

This warm Mediterranean salad is loaded with roasted cauliflower, roasted peppers, olives, artichoke hearts, and hearty farro, all tossed with a roasted red pepper dressing and oregano vinaigrette.

Ingredients

Bell peppers Cauliflower Olive oil Garlic powder Salt Pepper Red wine vinegar Maple syrup Oregano Farro Dinosaur kale Cherry tomatoes Cucumbers Olives Artichoke hearts

This roasted red pepper dressing is easy to prepare and so good. You'll find other things to use it on or dip into so make a big batch to keep on hand!

Veggies roast up quick. This adds extra flavor in the salad!

Mediterranean style cooking makes wide use of vegetables, olive oil, grains, fish, wine and meat. Thus, I included a soft wheat grain like farro into the salad.

Farro is considered an ancient wheat that is sweet and savory, has a soft tooth, and offers several benefits, including fiber, vitamins, and minerals.
