Dodo Dinner Salad

Inspired by the beloved Dodo Restaurant, this fresh dinner salad pairs tender greens with crispy bacon, toasted almonds, and a sweet, tangy Honey Lemon Bacon Dressing. It's a simple first-course salad that's elegant enough for entertaining and easy enough to enjoy any night of the week.

Ingredients

  • 8 oz baby butter lettuce (225 g) tender spring mix or red oak leaf lettuce
  • 6 slices cooked bacon (about 3.6 oz / 100 g), crumbled; prepared using my How to Cook Bacon Pieces in the Oven recipe
  • ⅓ to ½ cup sliced almonds (30 to 45 g) toasted
  • ½ cup Honey Lemon Bacon Dressing (180 g)

Instructions

  • Prepare the lettuce: Wash and thoroughly dry the lettuce.

  • Cook the bacon: Prepare the bacon using my How to Cook Bacon Pieces in the Oven recipe. Let it cool completely, then crumble into bite-sized pieces.
    6 slices cooked bacon
  • Toast the almonds: Place the sliced almonds in a dry skillet over medium heat. Cook for 3 to 5 minutes, stirring frequently, until lightly golden and fragrant. Let cool. This is optional, non-toasted is just as delicious.
    ⅓ to ½ cup sliced almonds
  • Add the toppings: Add the cooled bacon and toasted almonds to the lettuce, scattering them evenly throughout the greens.
  • Dress the greens: Drizzle with about half of the Honey Lemon Bacon Dressing and gently toss until the leaves and toppings are lightly coated. Add more dressing as desired.

  • Plate the salad: Gently lift and mound the salad onto individual plates, keeping some of the bacon and almonds visible on top. Clean hands work especially well here, giving you more control over how the greens and toppings land on the plate.
  • Serve immediately: Serve while the lettuce is crisp, the bacon is still crunchy, and the almonds retain their toasted bite. This salad is best enjoyed immediately after dressing.
