Ingredients

  • ½ cup honey (170 g)
  • ½ cup lemon juice (120 ml), freshly squeezed
  • cup bacon grease (75 g), warm but not hot
  • 2 teaspoons creamy Dijon mustard (10 g)

Instructions

  • Whisk the Base. Whisk the honey and freshly squeezed lemon juice together in a medium bowl until smooth. The lemon helps the honey dissolve.

  • Taste and Adjust. Taste the dressing. Add a little more honey if you'd like it sweeter or an extra squeeze of lemon juice for more brightness.
