HONEYMOON AVOCADO TOAST with White Balsamic Vinaigrette

Ingredients

For the Toast

  • 1 ripe avocado
  • 8 to 10 cherry tomatoes (120 g) halved
  • 2 slices sourdough bread (100 g) high-quality
  • 1 ounce feta cheese (28 g) 3 to 4 fresh basil leaves, crumbled

Quick White Balsamic Dressing

  • 2 teaspoons white balsamic vinegar 10 ml
  • 1 teaspoon honey 7 g
  • ½ teaspoon Dijon mustard 3 g
  • 1 small garlic clove (3 g) minced
  • Pinch kosher salt
  • black pepper Freshly ground
  • 1 tablespoon extra virgin olive oil (15 ml)

Instructions

  • Make the Dressing: Add all dressing ingredients to a small jar and shake until smooth and emulsified.
  • Dress the Vegetables: Gently toss the avocado and cherry tomatoes with the white balsamic dressing until lightly coated. Add chopped red onion if desired.
  • Toast the Bread: Lightly toast the sourdough until crisp around the edges but still tender in the center.
  • Build the Heart Shape: Slice each toast diagonally. Flip one half and press the cut edges together to create a heart shape.
  • Finish the Toast: Spoon the dressed avocado and tomatoes over the toast. Top with crumbled feta and fresh basil.
  • Serve and Enjoy: Serve immediately while the toast is still crisp and the avocado is creamy.

Notes

Bite Me Recipe Note: You can use regular balsamic if you can’t find white, but white makes it’s prettier and carries a slightly brighter, milder and sweeter flavor than dark. This is enough to lightly coat the avocado and tomatoes without overdressing them. I almost always make the full batch because it’s incredibly good on salads, grain bowls, vegetables, and proteins throughout the week.
