Juicy heirloom tomatoes are layered over fresh basil vinaigrette, then topped with creamy feta, toasted pine nuts, fresh basil, and a drizzle of balsamic glaze. Served with warm crusty bread, this simple appetizer is perfect for summer gatherings, dinner parties, or anytime beautiful tomatoes are in season.
3 to 4largetomatoes(about 2¼ pounds / 1 kg), sliced ¼ inch (6 mm) thick
3ouncesfeta cheese(85 g), crumbled
¼cuppine nuts(35 g), lightly toasted
⅛cupfresh basil leaves(4 g), torn if large
2tablespoonsbalsamic glaze(30 ml)
Flaky sea saltfor finishing (such as Maldon)
Freshly cracked black pepperto taste

Instructions
Spread the basil vinaigrette. Spoon the basil vinaigrette onto the center of a 12-inch (30 cm) serving platter. Using the back of a spoon, spread it into an even layer, leaving about a 1-inch (2.5 cm) border around the edge.

Arrange the tomatoes. Slice the tomatoes into ¼-inch (6 mm) rounds. Arrange them in a slightly overlapping layer over the basil vinaigrette.

Add the toppings. Sprinkle the crumbled feta evenly over the tomatoes, followed by the toasted pine nuts.
