Bacon Gruyere Egg Bites

Start your mornings with these tasty Bacon Gruyere Egg Bites, they are simple to fit into your morning routine and add excellent flavor and protein into your mid-week breakfast routine. Also fantastic for large gatherings when feeding a lot of people. Quickly whip up a few varieties by using different mix-in’s. Perfectly portable for grab-and-go meal prep during the busy week, simply heat up in the microwave for a few seconds, and voila!

Equipment

Ingredients

  • 10 large eggs (500g)
  • ½ lb bacon (227g), cooked and crumbled
  • 4 oz gruyere cheese (113g), 2 cups grated
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper flakes
  • salt and pepper to taste

Instructions

  • Preheat oven to 400°F (200°C). Grease a 12-count standard muffin pan with olive oil, or non-stick cooking spray, which also comes in olive oil. Fill each cup with an equal portion of the cooked bacon and Gruyere cheese.
  • Add 10 large cracked eggs to a mixing bowl and whisk together with salt, freshly ground black pepper, Italian seasoning, and red chili pepper flakes.
  • Pour egg mixture into muffin cups until ⅔ full. Do not over fill. Sprinkle tops with extra bacon and cheese if desired, the top garnish gives the egg bites a finished look.
  • Bake the egg bites for 15 minutes, or until set.
  • Allow the egg bites to cool a few minutes, serve your bacon gruyere egg bites immediately, or store for meal prep for those on-the-go mornings.
