Ingredients

Salad Ingredients

  • 5 cups arugula (150g)
  • 1 cup blackberries (150g)
  • ¾ cup blueberries (110g)
  • 1 avocado diced
  • 1 ½ cups cucumber (200g) sliced thinly
  • cup feta cheese (50g)
  • cup toasted hazelnuts (40g)

Mint Lime Vinaigrette

  • cup olive oil (80ml)
  • 2 tablespoon freshly squeezed lime juice (30ml)
  • 1 tablespoon honey (15ml) or maple syrup
  • 2 tablespoon fresh mint (6g) finely chopped
  • ¾ teaspoon salt (4g)
  • Freshly ground black pepper to taste

Instructions

  • Whisk together all ingredients for vinaigrette. Taste and adjust seasoning as desired.
