This pico de gallo bursts with flavor from the vibrant combination of ripe tomatoes, zesty onion, spicy jalapeño, fragrant cilantro, and the harmonious blend of garlic, olive oil, and apple cider vinegar. All made quick and easy as a fresh blender salsa.
Place everything in the blender, except the tomatoes. Give it a few quick pulses to begin chopping the onion. Add the tomatoes and continue to blend to desired texture.
Give it a taste. If you feel it needs more tomatoes, feel free to add more. Add salt to taste.
If you feel it is a bit bitter from the onion, add a tablespoon of sugar.
If you don’t have the luxury of ripe garden tomatoes and want a deeper tomato flavor, add 2oz of tomato paste.
