This pico de gallo was my mother’s recipe that she made for our family growing up. I have continued making this blender salsa for my family throughout the summers to take advantage of garden-fresh tomatoes and summer fun. Pico de gallo is a raw, fresh salsa, also known as salsa fresca (fresh sauce), or salsa cruda (raw sauce).

Ingredients for Pico de Gallo Blender Salsa
- Tomatoes – since mother nature does not grow on point, plan to use about 2-3lbs
- Onion – choose a sweet onion for its gentle contribution, be sure to skip the more bold white onions.
- Jalapeño pepper – one with seeds is quite mild, feel free to add another for more spice.
- Cilantro – ⅓ of a bunch of fresh cilantro adds that cultural fragrance we all know and love.
- Garlic – three fresh cloves add the depth of authenticity needed to complete this salsa.
- Olive Oil – keep it high quality and you’ll never have to worry about ruining a perfectly good recipe.
- Apple Cider Vinegar – this is my favorite ingredient in this recipe because it truly refines the overall flavor. You can sub with lime juice. But in this case, I highly recommend Braggs apple cider vinegar.
Add in Options:
- Sugar – perhaps your onions were stronger or more bitter than anticipated, add a little sugar to balance the flavor.
- Tomato Paste – if you’re seeking a bit more concentrated tomato flavor beyond your vine-ripened garden tomatoes simply add 2oz of tomato paste to add a little extra flavor pop.
How to Make Fresh Blender Salsa
- Place everything in the blender, except the tomatoes. Give it a few quick pulses to begin chopping the onion. Add the tomatoes and continue to blend to desired texture.
- Give it a taste. If you feel it needs more tomatoes, feel free to add more. Add salt to taste.
- If you feel it is a bit bitter from the onion, add a tablespoon of sugar.
- If you don’t have the luxury of ripe garden tomatoes and want a deeper tomato flavor, add 2oz of tomato paste.

Ingredients
- 3 large tomatoes about 2-3lbs
- 1 medium onion
- 1 jalapeño pepper
- ½ c cilantro about ⅓ bunch
- 3 cloves garlic
- 2 tbs olive oil
- 2 tbs apple cider vinegar
Add in Options
- 1 tbs sugar
- 2 oz Cento tomato paste
