Ingredients
6cupsbaby red butter lettuce or spring mix
6medium strawberriessliced
4oz.blueberries
4oz.raspberries
⅓calmondssliced
½honeycrisp applesliced
3oz.dried cherries or cranberries
4oz.feta cheesecrumbled
12oz.roast chickenor grilled
Strawberry White Balsamic Vinaigrette
1cupstrawberrieshulled, about 5 strawberries (5oz)
⅓cextra virgin olive oil
⅓cwhite balsamic vinegar
1tbshoneyor maple syrup if vegan
1tbsstone ground dijon mustard
½teaspoonsalt
½teaspoonground black pepper
Instructions
In a large salad bowl, combine the salad ingredients. This can also be done by dividing ingredients into 4 individual salad plates.
Gently toss salad with vinaigrette just before serving. You may not need to add all of the vinaigrette. Feel free to add as much or as little as you’d like or serve on the side.
