This Strawberry Bistro Salad will make you feel like you’re at a bistro at your own dinner table. Prep it for a workday lunch, or enjoy it on the weekend on the back patio.

Why you will love this Strawberry Bistro Salad
Obviously I love it and I think you will too! I don’t usually tell stories, but I recently went to a cute casual café called The 208 in a small town called Burley Idaho and ate their menu item called The Market Salad, this is my rendition of that salad.
Ingredients for the Main Salad
- Baby red butter lettuce or spring mix
- Fresh strawberries sliced and fanned out
- Fresh blueberries
- Fresh raspberries
- Almonds, sliced
- Honeycrisp apple sliced
- Dried cherries or cranberries
- Feta cheese, crumbled - I prefer to purchase in a block and crumble
- Roast or grilled chicken - I adore the ease of Costco rotisserie chicken.



Ingredients for Strawberry White Balsamic Vinaigrette
- Strawberries – fresh in the season if possible. Off-season frozen is a good substitute.
- Olive Oil – always select a good, fresh, olive oil. I prefer frutato by @cucinaandamore for this recipe.
- White balsamic vinegar – again a good brand can make or break your flavor delivery, my preferred brand is the white balsamic by Cucina and Amore
- Honey – I always choose local to capture the allergen benefits. If can keep this recipe vegan by choosing maple syrup. Adjust the honey according to desired sweetness, and add another tablespoon for sweeter.
- Stone ground dijon mustard – I love the rugged texture the stone ground lends to this dressing.
- Salt and Pepper
- Note: For most of the country, June is prime time for strawberries.

Strawberry Bistro Salad

Ingredients
- 6 cups baby red butter lettuce or spring mix
- 6 medium strawberries sliced
- 4 oz. blueberries
- 4 oz. raspberries
- ⅓ c almonds sliced
- ½ honeycrisp apple sliced
- 3 oz. dried cherries or cranberries
- 4 oz. feta cheese crumbled
- 12 oz. roast chicken or grilled
Strawberry White Balsamic Vinaigrette
- 1 cup strawberries hulled, about 5 strawberries (5oz)
- ⅓ c extra virgin olive oil
- ⅓ c white balsamic vinegar
- 1 tbs honey or maple syrup if vegan
- 1 tbs stone ground dijon mustard
- ½ teaspoon salt
- ½ teaspoon ground black pepper
Instructions
- In a large salad bowl, combine the salad ingredients. This can also be done by dividing ingredients into 4 individual salad plates.
- Gently toss salad with vinaigrette just before serving. You may not need to add all of the vinaigrette. Feel free to add as much or as little as you’d like or serve on the side.
Vinaigrette Instructions
- Place everything in a food processor or small blender and give it a quick buzz.

Other fun additions:

- ¼ red onion, finely sliced
- 1 avocado, sliced and fanned
