INGREDIENTS FOR THIS SHAVED CARROT SALAD
Carrots may be humble, but they shine when handled thoughtfully. Shaving them into thin ribbons creates a salad that feels light, colorful, and full of texture.
- Extra-virgin olive oil: Provides body and richness to the dressing. It smooths the citrus and balances the salty depth of miso.
- Fresh orange juice: Adds brightness and gentle sweetness. Citrus also softens the carrots slightly while keeping the salad lively.
- White miso paste: Brings savory umami and subtle fermented depth. It transforms this carrot ribbon salad with miso dressing into something layered and complex.
- Rice vinegar: A mild acidity that sharpens the flavors without overwhelming the citrus. It keeps the salad clean and balanced.
- Fresh ginger: Adds warm aromatic spice. Ginger pairs beautifully with carrots and enhances the citrus notes.
- Garlic: Contributes savory backbone and gentle bite. Just a small amount deepens the dressing.
- Honey: Softens acidity and rounds out the dressing. It helps the flavors feel cohesive and balanced.
- Carrots: The heart of this shaved carrot salad. Carrots bring sweetness, color, fiber, and beta-carotene.
- Parsley or cilantro: Adds bright herbal freshness. Both options lift the salad and add vibrant green color.
- Watermelon radish: Provides crisp texture and stunning color contrast. Its mild peppery bite complements sweet carrots.
- Fresh mint: Brings cool aromatic lift. Mint keeps the salad lively and refreshing.
- Toasted sesame seeds: Offer nutty flavor and delicate crunch. Sesame pairs naturally with miso and ginger.
- Green scallions: Add mild onion brightness and a final pop of color. They finish the salad with a clean savory note.

HOW TO MAKE THIS SHAVED CARROT SALAD
This salad comes together quickly and feels effortlessly elegant. With nothing more than a vegetable peeler, carrots turn into delicate ribbons ready to soak up every drop of citrus miso dressing.
Instructions
- Whisk the dressing: In a large mixing bowl, combine olive oil, orange juice, miso paste, rice vinegar, ginger, garlic, and honey. Whisk until smooth and well blended. Set aside while you prepare the vegetables.
- Shave the carrots: Peel the carrots and trim the ends. Using a vegetable peeler, shave long ribbons down the length of each carrot. Rotate the carrot as you go to create even ribbons. Once you reach the firm inner core, stop shaving and reserve the cores for soups or stocks.
- Build the salad: Add the shaved carrots directly to the bowl with the dressing and toss gently to coat.
- Finish and serve: Sprinkle in the parsley or cilantro, mint, watermelon radish, and toasted sesame seeds. Toss lightly once more until everything is evenly distributed. Garnish with sliced scallions and serve immediately for the freshest texture.

FRESH SALADS TO BRIGHTEN YOUR TABLE
Once you start playing with fresh vegetables like this shaved carrot salad, it becomes second nature to build simple salads from whatever is in season. Some nights I roast a pan of beets and toss them with one of my go-to dressings, like an Easy Balsamic Vinaigrette or a Simple Citrus Olive Oil Dressing. Other days call for something crisp and refreshing, like Israeli Cucumber Tomato Salad, Cucumber Tomato Avocado Salad, or my favorite summer classic, Panzanella Salad when tomatoes are at their peak. When asparagus arrives in spring, a quick Raw Asparagus Salad is hard to beat. When peaches are sweet and juicy, Peach Burrata Prosciutto Salad always feels a little celebratory. And if you love carrot ribbons as much as I do, I also have another Ribboned Carrot Salad tossed with a tangy lemon vinaigrette that is just as fast and delightful, but with a completely different personality.

FEATURED CARROT FARMERS
Did you know the U.S. harvests about 3.4 billion pounds of fresh carrots each year? California leads production, with Washington, Texas, Michigan, Florida, Colorado, and Wisconsin also growing impressive crops. While carrots are a powerhouse of American agriculture, small local growers bring us the most personal harvests. Supporting them keeps our kitchens connected to the hands that grow our food. Let's meet a few local farmers:
Steep Mountain Farm:
Steep Mountain Farm in northern Utah grows sweet, crisp carrots using regenerative practices that care for the soil and honor the land. Each ribbon in your salad carries the flavor of thoughtful, sustainable farming.
First Frost Farm:
First Frost Farm in Cache Valley has been growing certified-organic produce since 2002, with every carrot nurtured on just five acres of cared-for soil. Each crisp bite reflects their love for fresh, local farming.
Frog Bench Farms:
Frog Bench Farms grows a rainbow of root veggies — like carrots in all shapes and colors — right from their cozy plots, bringing you fresh sweetness straight from soil still warm from the morning sun. When you bite into those ribbons, you’re tasting more than crunch, you’re tasting seasons rotating, soil loved, and care that shows.
