Sometimes the best soups aren’t planned, they just happen. This Creamy Zuppa Toscana without Bacon came together after a TV segment where I’d made a kale salad. When I came home with leftover lacinato kale, I tossed it into a pot with spicy sausage, golden potatoes, and rich broth. No bacon needed, just a cozy, creamy soup born from improvisation and a little kitchen inspiration. The sausage brings all the richness and depth this Tuscan-style soup could ever want. It’s hearty, comforting, and the kind of meal that makes you feel like you’ve done something good. Now I’ve turned it into a recipe just for you.
