It’s fresh, fast, and uses white balsamic to let the strawberries be the star of the show. Simply add everything to a small food processor or blender and viola! Five minutes and you’re ready to build a salad.
Ingredients for Strawberry White Balsamic Vinaigrette
- Strawberries – fresh in season if possible. Off-season thawed from frozen is a good substitute.
- Olive Oil – always select a good, fresh, olive oil. I prefer frutato by @cucinaandamore for this recipe.
- White Balsamic Vinegar – again a good brand can make or break your flavor delivery, my preferred brand is the white balsamic by Cucina and Amore
- Honey – I always choose local to capture the allergen benefits. If can keep this recipe vegan by choosing maple syrup.
- Stone Ground Dijon Mustard – I love the rugged texture the stone ground lends to this dressing.
- Salt and Pepper

How to Choose a Good Olive Oil
Good does not mean expensive, but it does mean the following:
- Only buy oil labeled extra-virgin. Bottles labeled plain "olive oil" and "light olive oil" are refined oils.
- Freshness equals flavor and quality - Look for Harvest Date! Pay attention to harvest and "use by" dates. The finest producers proudly label their olive oil with a harvest date. Deceptively the use-by date usually refers to 18 months from bottling, rather than from harvest.
- Select a first cold-pressing olive oil - By legal definition, extra-virgin oil must come from the first and only pressing, which must be accomplished with no added heat, at ambient temperatures no higher than around 80°F.
- Extra-virgin olive oil does not improve with age. - ⅓ c white balsamic vinegar
- 1 tbs honey or maple syrup if vegan
- 1 tbs stone ground dijon mustard
- ½ teaspoon salt
- ½ teaspoon ground black pepper
